Blackened Fish with Pineapple Salsa Ingredients: Fish 1 lb. of fish such as: Cod, Tilapia, Mahi-Mahi Cajun Spice Blend 1 tsp Salt 1 tbsp Paprika 1 tsp Oregano ½ - ¾ tsp Cayenne ½ tsp Garlic Powder ½ tsp Onion Powder ½ tsp Black Pepper 1 tsp Brown Sugar Pineapple Salsa 1 small Pineapple Chopped (~3 cups) 1 small Red Pepper Diced 1 small Green Pepper Diced ½ Red Onion Chopped ¼ cup Cilantro Chopped 1 Lime Juice Only 1 tbsp Olive Oil 1 tsp Honey ½ tsp Ground Cumin ½ tsp Salt Instructions: Fish 1. Combine salt, paprika, oregano, cayenne, garlic powder, onion powder, black pepper and brown sugar into a mixing bowl. 2. Pat fish dry with paper towel. Drizzle or brush small amount of olive oil onto one side of the fish. 3. Sprinkle spice blend onto side of fish brushed with olive oil. Gently pat fish. 4. Flip the fish. Brush or drizzle olive oil onto this side of the fish. Sprinkle spice blend onto this side of the fish. Gently pat fish. 5. Preheat oven to 425 degrees. Place fish on parchment paper on a baking sheet. Cook fish for 9-11 minutes or until proper internal temperature is met. Pineapple Salsa 1. Combine all ingredients into mixing bowl.
